Ten years ago, I used retrospective methods to straighten out the changes in food structure and their relationship with health and disease among residents in Shanghai over the 35 years from 1950 to 1985. The results showed that in the past 35 years, the dietary structure and nutritional structure of residents in Shanghai have undergone significant changes. The characteristics of the changes are as follows: food consumption shows a downward trend, animal food consumption has doubled, and carbohydrate intake has dropped
