10年前，笔者等曾用回顾性方法对上海地区居民1950年至1985年35年间食物结构变化及其与健康和疾病的关系做过调直研究。结果表明，35年来，上海地区居民的膳食结构和营养结构发生了明显变化。变化特点是：粮食消费呈下降趋势，动物性食物消费成倍增长；碳水化合物摄入量呈下降 Ten years ago, I used retrospective methods to straighten out the changes in food structure and their relationship with health and disease among residents in Shanghai over the 35 years from 1950 to 1985.
