豆腐是用黄豆液加上凝固剂或石膏,再压实去水制成。含蛋白质、脂肪、维生素E、B群、卵磷脂和多种矿物质,营养价值高,价格又便宜,一般民众皆适宜食用。豆腐不含胆固醇,又可降低血压、防癌抗老,是广受欢迎的食材,尤其适合高胆固醇、高血压、心血管疾病、癌症患者。豆腐胺基酸的组成成分中,缺乏一部分的必需胺基酸,透过和肉类或蛋类搭配烹煮,可增加营养价值。
