南台岛位于福州市西南部,为闽江和乌龙江所环抱,面积150km~2,地理位置东经119～119.4°、北纬25.8～26.5°,属亚热带海洋性季风型气候,岛上都分布玉兰、龙眼、荔枝等经济阔叶林,年平均气温19℃,夏季平均28℃,每年3～5月逢多雨或洪涝时期,大量的黑翅土白蚁离巢群飞,脱翅后的白蚁双双配对钻入地下营巢,开始新的世代,7月下旬到9月初,在林地上、农家屋角、田梗边、堤坝上便有较多的鸡(土从)菌发生,尤其雨水充足时,阴湿的林地上子实体会成批出现。当地群众采食鸡(土从)已有悠久的历史,称之为篮香菇、白蚁菇。
