随着经济的全球化,食品安全已经越来越受到人们的关注,而微生物污染已成为食品安全的首要问题。食品致病菌是引发食物中毒和食源性疾病暴发的重要因素。传统的检测方法必须经过细菌的分离、培养与鉴定,不但耗时耗力而且不适于大量样品同时检测,不能满足食物中毒和食源性疾病暴发时的检测需要。近年来随着P C R检测技术的快速发展,其在微生物检测中的应用也越来越广泛,实时荧光定量PCR作为PCR检测方法中的一种,因其具有较强的特异性和灵敏度并且还有检测速度快、准确性高等优点,在检测食品微生物的应用中有较强优势。本文介绍实时荧光定量PCR技术在金黄色葡萄球菌、沙门菌、志贺菌、单核细胞增生李斯特菌、大肠埃希菌等几种常见食源性致病菌检测中的应用。
With the globalization of economy, food safety has drawn more and more attention, and microbial contamination has become the primary problem of food safety. Foodborne pathogens are an important factor in triggering food poisoning and foodborne illness outbreaks. Traditional detection methods must be separated, cultured and identified by bacteria. It not only consumes time and energy but also is not suitable for simultaneous detection of a large number of samples, which can not meet the detection needs of food poisoning and foodborne disease outbreaks. In recent years, with the rapid development of PCR detection technology, its application in the detection of microorganisms is also more and more widely. Real-time fluorescence quantitative PCR as one of the PCR detection methods, because of its strong specificity and sensitivity and Detection speed, high accuracy, the detection of food microorganisms in the application of a strong advantage. This article introduces the application of real-time fluorescence quantitative PCR in the detection of several common food-borne pathogens such as Staphylococcus aureus, Salmonella, Shigella, Listeria monocytogenes and Escherichia coli.
