黑蒜具有抗氧化、降血糖、降血脂、增强免疫力等功效,逐步进入人们的视野。粗多糖是黑蒜中的有效活性物质之一,试验以黑蒜为原料,经过热水浸提、旋转蒸发浓缩、离心、Sevage法除蛋白、沉淀洗涤、干燥等分离纯化过程,获得黑蒜粗多糖,其黑蒜粗多糖的提取率为8.14%;用苯酚-硫酸法测其粗多糖的纯度为43.0%;通过对四氧嘧啶诱发的高血糖小鼠进行黑蒜粗多糖溶液灌胃,14 d后通过测定小鼠血糖值验证黑蒜粗多糖的降血糖效果。结果表明:黑蒜粗多糖对四氧嘧啶诱发的高血糖有降低作用,且高剂量黑蒜粗多糖的降血糖作用效果显著,对正常小鼠的血糖值无影响。
