目的 :对长沙市奶茶及其制作原料中危险因子TFA含量进行测定和分析,为市民购买奶茶类饮品做出指导。方法 :随机抽取长沙市内10种原味奶茶、10种袋装奶茶、5种奶精、15种果粉,按照GB/T 22110-2008《食品中反式脂肪酸的测定气相色谱法》规定的标准方法对样本中反式脂肪酸含量进行检测,样本检测的结果按GB 28050-2011《食品安全国家标准预包装食品营养标签通则》进行评价。结果 :在长沙市购原味奶茶中TFA含量最大值为2.441g,最小值为0.250g,TFA含量值与标准值比较,差异具有统计学意义(t=2.893,P<0.05)。在10种袋装奶茶中,TFA含量最多的是3.488g,最少的是0.147g,将TFA含量值与标准值比较,差异具有统计学意义(t=2.393,P<0.05);在5种奶精中TFA含量最多的是3.542g,最少的是0.391g,15种果粉中TFA含量最大值为1.463g,最小值为0.312g,其TFA含量全部超过国家标准值。结论 :各种形式的奶茶及其制作原料中都含有大量的反式脂肪酸,所以应减少奶茶的饮用,降低反式脂肪酸的摄入量,以期降低患心血管疾病等疾病的风险。
OBJECTIVE: To determine and analyze the content of TFA in milk tea and its raw materials in Changsha City, and provide guide for citizens to buy milk tea drinks. Methods: Ten kinds of original milk tea, 10 kinds of packaged milk tea, 5 kinds of creamer and 15 kinds of fruit powder were randomly selected from Changsha. According to the standard method of GB / T 22110-2008 “Determination of trans fatty acids in foods” The sample trans-fatty acid content test, the sample test results according to GB 28050-2011 “national food safety standards for pre-packaged food nutrition labeling” evaluation. Results: The content of TFA in purchased raw tea in Changsha was 2.441g with the minimum value of 0.250g. The difference of TFA content with the standard value was statistically significant (t = 2.893, P <0.05). Among the 10 kinds of packaged milk tea, the content of TFA was 3.488g, the minimum was 0.147g. There was significant difference between the content of TFA and the standard value (t = 2.393, P <0.05) The content of TFA in essence was 3.542g, the least was 0.391g. The maximum content of TFA in 1.4 kinds of fruit powder was 1.463g, the minimum was 0.312g. The content of TFA all exceeded the national standard value. CONCLUSIONS: All forms of milk tea and its ingredients contain high levels of trans-fatty acids. Therefore, tea drinking should be reduced and trans-fatty acid intake reduced in order to reduce the risk of diseases such as cardiovascular diseases.
