采摘茶树在年生长周期中,新梢一般生育四次。每轮新梢从萌动展叶至出现对夹叶而趋于成熟的变化过程,人们按所采芽叶的老嫩程度分为不同的级别,我所把鲜叶分为五级。不同级别的鲜叶由于老嫩的差别,內含成分高低不一,所制成茶品质自然有所不同,就是同级的鲜叶,因茶季不同,芽叶的有效成分差別很大,成茶品质差距也很显著。本文对不同茶季原料的品质变化暂不进行探讨,仅对鲜叶的级
