在社会文化大范围之中,饮食文化是一个最基本而又容易被人忽视的文化现象。古往今来,人类社会生生不息不断地向前发展,其中最简单的道理就在于能够通过饮食来满足人的机体本能,从而使生命得以延续和繁衍。尽管饮食在人类社会生活中占据重要地位,但人们对它的认识仍很肤浅。时至今日,也还只是从满族人的生理需要与它的物质构成上着眼,而没有从文化学角度来进行认真探讨。事实上,饮食固然是物质的,是维系人类生命必不可少的一种手段,但它同时也是一种文化现象,它的产生与发展始终反映和体现着人类社会的文明程度。
In the social and cultural range, food culture is one of the most basic and easily overlooked cultural phenomenon. From ancient times to now, the continuous development of human society continuously advances. The simplest truth lies in that we can meet the human instinct of our body by eating and drinking, so that life can be continued and multiplied. Although the diet occupies an important position in human social life, people’s understanding of it remains superficial. Today, however, it still only focuses on the physiological needs of the Manchus and its material composition, without earnestly studying it from a cultural perspective. In fact, although diet is material, it is an indispensable means of maintaining human life, but it is also a kind of cultural phenomenon. Its production and development always reflect and embody the civilization of human society.
