中国的古代文明,主要起源于黄河流域。那时,孩子们没有糖吃。三千年前的一个夏天,遇到了连阴雨,收获的大麦淋雨发了芽。人们舍不得丢弃,把它晒干,磨成粉,掺在米里煮稀饭吃。奇妙的事儿发生了。原来淡而无味的稀饭,没料到竟变成了甜甜蜜蜜的糖稀。中国人从此学会了制作“饴糖”。这是当时最受孩子们欢迎的一大发明。麦芽粉为什么能使淀粉变成糖呢?原来大麦在发芽时,产生了一种神奇的物质,叫做“糖化酶”。它们有独特的本领,专把淀粉变成糖。
