目的测定7种常见辣椒的DPPH自由基抑制活性。方法采用酶标法测定不同辣椒品种不同浓度的甲醇提取液对DPPH自由基吸光度的抑制,计算抑制率。结果红美人椒活性最高,其他6种辣椒均有一定的DPPH自由基抑制活性。结论 7种餐桌上常见辣椒均有一定的DPPH自由基抑制活性能力。
Objective To determine the DPPH radical scavenging activity of seven common capsicums. Methods The enzyme-linked immunosorbent assay (ELISA) was used to determine the inhibition of DPPH radical scavenging of different concentrations of methanol extract from different pepper varieties. The inhibition rate was calculated. Results Red Pepper is the highest activity, the other six kinds of peppers have DPPH radical scavenging activity. Conclusion The common peppers on the seven kinds of table all have DPPH radical scavenging activity.
