目的对武汉市市场销售的灌肠类肉制品中红色2G色素非法使用现状进行监测,对其健康危害评估提供依据。方法在全市范围内分层随机抽样,采集超市、集贸市场及肉制品专营店出售的灌肠类食品样品156件,采用高效液相色谱法检测,Eclipse XDB-C18色谱柱(4.6 mm×250 mm,5μm),甲醇和0.02 mol/L乙酸铵溶液为流动相进行梯度洗脱,流速1.0 ml/min,柱温35℃,检测波长530 nm,进样量10μl。结果 23件样品检出红色2G色素,检出率为14.74%,含量范围0.20~5.21 mg/kg,集贸市场检出率高于其他经营场所(P<0.05)。结论灌肠类肉制品中红色2G色素污染现象不容忽视,建议有关部门将其列为食品安全日常监测项目。
Objective To monitor the status of illegitimate use of red pigment 2G in sausage meat products marketed in Wuhan and provide the basis for their health hazard assessment. Methods A total of 156 samples of enema were collected from supermarkets, markets and meat products stores by random sampling across the city. The samples were analyzed by high performance liquid chromatography (HPLC) with Eclipse XDB-C18 column (4.6 mm × 250 mm , 5μm). The mobile phase was eluted with methanol and 0.02 mol / L ammonium acetate solution. The flow rate was 1.0 ml / min and the column temperature was 35 ℃. The detection wavelength was 530 nm and the injection volume was 10μl. Results The results showed that the detection rate of red pigment was 23.74% and the content range was 0.20 ~ 5.21 mg / kg. The detection rate of bazaars was higher than that of other sites (P <0.05). Conclusion Erythrocyte meat products can not be neglected in the phenomenon of red pigment 2G. It is suggested that relevant departments should list them as routine food safety monitoring items.
