目的:优化羽衣甘蓝中多酚成分的提取工艺,确定羽衣甘蓝最佳提取条件,研究多酚对三种自由基的清除率,进一步分析羽衣甘蓝中多酚的抗氧化活性。方法:多酚提取主要采用超声波提取方法,并通过正交试验确定优化提取条件,采用邻苯三酚自氧化法、Fenton反应、DPPH法检测其清除自由基。结果:羽衣甘蓝优化提取条件为:料液比1∶20,乙醇浓度为50%,提取时间40min,温度40℃。根据该条件提取总多酚,提取率为6.4mg·g-1,清除自由基能力良好。对多酚总抗氧化活性能力进行研究,其抗氧化特性较好。结论:采用正交实验优化羽衣甘蓝最佳提取条件,提取出的多酚成分对人体自由基清除作用良好,并具有较好的抗氧化活性。
OBJECTIVE: To optimize the extraction process of polyphenols in kale, determine the optimum extraction conditions of kale, study the clearance rate of polyphenols to three free radicals and further analyze the antioxidant activity of polyphenols in kale. Methods: The extraction method of polyphenols was mainly ultrasonic extraction, and the optimal extraction conditions were determined by orthogonal test. The free radicals were scavenged by pyrogallol autoxidation, Fenton reaction and DPPH method. Results: The optimal extraction conditions for kale were as follows: the ratio of solid to liquid was 1:20, the concentration of ethanol was 50%, the extraction time was 40 min and the temperature was 40 ℃. According to this condition, the total polyphenols was extracted with a yield of 6.4 mg · g-1, and the ability to scavenge free radicals was good. The total antioxidant activity of polyphenols to study the antioxidant properties better. Conclusion: The optimal extraction conditions of kale were optimized by orthogonal experiment. The extracted polyphenols had good scavenging activity on free radicals and had good antioxidant activity.
