制糖工业的主要原料是甘蔗和甜菜。炎热地区适宜栽培甘蔗,甘蔗糖制造工业就比较发达,如我国台湾、广东等地。而寒冷地区适宜生成甜菜,甜菜糖制造工业亦就旺盛,如苏联、捷克斯洛伐克、德国等。目前,我国的制糖工业以甘蔗糖为主。在制造的产品中,又因原料的各异,制造程序的不同,结晶颗粒的大小,色泽的深浅,具有种种的名称。普通常见的是白糖、红糖和冰糖。白糖,就是普通的粗制糖。一般是经过甘蔗压榨、蔗汁澄清、压滤、蒸发浓缩後,得到浓厚的糖浆。浓厚的糖浆再煮沸精炼到一定浓度(饱和点),晶体即行结出。煎糖而得的蔗糖结晶,和糖蜜混合在一起,叫作糖膏。使用离心机把它们分出,所得到的结
