三丝冬瓜扣 主料:冬瓜300g,火腿肠1根,木耳50g(发好的),红辣椒100g。 调料:精盐8g,姜葱汁10g,青油少许,湿生粉5g。 制法:1.将冬瓜去皮去籽洗净,切成5cm长、3cm宽的薄片,放入盐、姜葱汁、鸡精粉腌10分钟待用。 2.火腿肠、木耳、红辣椒切成1cm长的条,放入腌冬瓜汁中腌渍10分钟取出。 3.将冬瓜片放在菜板上,每片冬瓜上放2条切好的火腿、木耳和红辣椒,卷好后扣入碗中,上笼蒸10分钟,扣入碟中即可。
