芦笋为百合科天门冬属的多年生草本植物,茎高约1米,有紧贴的鳞片状叶,块根肉质簇生,每年5～6月份开花,9～10月份结果,花呈黄绿色,果为肉红色,种子为黑色。食用部分是未出土或刚出土的嫩茎,颇似竹笋,因而得名。
