白酒是中华民族的特产饮料,广大人民爱好的蒸馏酒,古时称为烧酒或火酒,历史悠久,工艺独特,风味各异,品种繁多,迄今年产量达800万吨左右,居全国饮料酒的第二位,在国民经济中占有重要的地位,故有”当好县长,办好酒厂“的说法,是地方财政的主要支柱,可繁荣市场经济,丰富人民生活。白酒生产工艺,沿袭古老的传统操作,以酒曲进行边糖化边发酵的复式发酵法,即固态法发酵白酒;而国外驰名的蒸馏酒,如苏格兰威士忌、科湟克白兰地、牙买加老姆酒、荷兰锦酒和俄罗斯伏特加等,无论是用谷物和葡萄等为原料酿酒都是液态法发酵,其机械化程度高,出酒率也高,劳动强度小。从上述酒种看出,有的酒种如伏特加等是用酒精进行生产;又如日本仿中国的烧酎,早就采用食用酒精制造,称甲类(新式)烧酎,说明我国固态法发酵白酒有研究和改进的必要。
Liquor is a specialty drink of the Chinese nation. Distilled spirits liked by the majority of the people are known as shochu or bonfire in ancient times. It has a long history, unique crafts, different flavors, and various varieties. Its annual output has reached about 8 million tons so far, ranking the national beverage liquor. The second place, which occupies an important position in the national economy, has the argument that “be a good county governor and run a good winery.” This is the main pillar of local finance, which can prosper the market economy and enrich people’s lives. Liquor production process, followed by ancient traditional operations, distiller’s yeast fermentation with double sided saccharification, that is, solid-state fermentation of liquor; and foreign well-known distilled liquor, such as Scotch Whisky, Cork Brandy, Jamaican rum, Holland Jin wine and Russian vodka, whether it is to use grains and grapes as raw materials for winemaking are all liquid fermentation, a high degree of mechanization, high liquor yield, labor intensity. From the above wines, some wines such as vodka are produced with alcohol; another example is Japan’s imitating China’s burning wolfberry, which has long been manufactured using edible alcohol, and called a (new type) burning wolfberry, indicating that the Chinese solid-state fermentation Liquor is necessary for research and improvement.
