[目的]寻求烟叶内在物质含量的变化规律。[方法]从装烟密度上,对烟叶内多酚总量和分量、质体色素和有机酸等香气前体物质进行研究,寻求烟叶内在物质的变化规律。[结果]烤烟多酚总量随着装烟密度的增加呈下降的趋势;质体色素含量随着装烟密度的增加而降低;葡萄糖和果糖含量随装烟密度的增加而降低,而蔗糖与之相反;多元酸含量随装烟密度的增加呈现出先升高后降低的趋势,而高级脂肪酸与之相反。因此,装烟密度为400竿,多酚总量、质体色素、糖类及有机酸含量较为平衡,烟叶品质较为协调。[结论]该研究填补了装烟密度对烟叶品质影响的空缺,可为烟叶烘烤工艺提供参考依据。
[Objective] The research aimed to seek the change rule of tobacco internal substance content. [Method] From the packing density, the contents of polyphenols in tobacco leaves were studied, such as the total amount of polyphenols and their precursors, plastid pigment and organic acid. [Result] The total amount of polyphenols in flue-cured tobacco tended to decrease with the increase of packing density. The content of plastid pigment decreased with increasing packing density. The content of glucose and fructose decreased with the increase of packing density, while the contrast of cane sugar The content of polyacid increased with the increase of the density of the tobacco, then increased and then decreased. However, the higher fatty acid had the opposite trend. Therefore, the smoke density of 400 rods, the total amount of polyphenols, plastid pigment, sugar and organic acid content is more balanced, the quality of tobacco is more coordinated. [Conclusion] The study fills the vacancy of cigarette density on the quality of tobacco, which can provide a reference for the tobacco baking process.
