目的调查新乡市市售散装的熟肉制品中亚硝酸盐的含量,为监督管理肉制品市场和制定预防亚硝酸盐食物中毒的相关措施提供依据。方法采取随机抽样的方法,对新乡市经营销售的熟肉制品采样,按照国家标准GB5009.33-2003《食品中亚硝酸盐与硝酸盐的测定方法》中的盐酸萘乙二胺法测定肉制品中亚硝酸盐的含量。结果共检测124份样品,超标39份,超标率为31.45%;超市中肉制品的卫生质量优于流动摊点。结论新乡市市售熟肉制品卫生质量不容乐观,相关单位应加强对熟肉制品市场的监督。
Objective To investigate the content of nitrite in the cooked cooked meat products on the market in Xinxiang City and provide the basis for the supervision and management of the meat product market and the formulation of measures to prevent the nitrite food poisoning. Methods A random sampling method was adopted to sample cooked cooked meat products for sale in Xinxiang City. The meat products were determined according to the national standard GB5009.33-2003 “Naphthalene and ethylenediamine hydrochloride method for determination of nitrite and nitrate in food” Central Asian nitrite content. Results A total of 124 samples were tested, exceeding the standard of 39, exceeding the standard rate of 31.45%. The health quality of meat products in supermarkets was superior to that of mobile devices. Conclusion The hygienic quality of cooked meat products on the market in Xinxiang City is not optimistic, and the relevant units should strengthen the supervision of cooked meat products market.
