目的了解南通市某区近几年餐饮机构及学校食堂餐具的消毒卫生状况,正确评价消毒效果水平,为今后相关场所的卫生监督监测提供可靠依据。方法根据《食(饮)具消毒卫生标准》GB 14934-1994相关规定,对2010-2014年南通市某区辖区内餐饮机构及学校食堂消毒餐具进行微生物检测并分析。结果 2010-2014年共检测样品5675份,各年度合格率分别为67.42%、72.39%、78.37%、82.57%、87.39%,总合格率为77.11%。其中大、中型餐饮机构合格率为77.91%,小型餐饮机构合格率为72.46%,学校食堂合格率为75.22%;不同种类餐具合格率中合格率最高的是碗类,最低的是其他类;春冬季餐具合格率高于夏秋季的合格率。结论 2010-2014年南通市某区餐饮机构及学校食堂餐具检测合格率逐年上升,但仍低于全省平均水平。今后应加大卫生监督的执法力度,全面提高辖区内餐饮机构及学校食堂的卫生水平,保障人民的饮食安全。
Objective To understand the status of disinfection and sanitation of catering establishments and school canteens tableware in a certain area of Nantong City in recent years and to correctly evaluate the disinfection effect level so as to provide a reliable basis for the health supervision and monitoring of related places in the future. Methods According to the relevant provisions of Sanitary Standard for Food and Beverage Sterilization (GB / T 9959-1994), the microbiological tests were conducted on the catering establishments and the canteen disinfection tableware in a district of Nantong City during 2010-2014. Results A total of 5675 samples were tested in 2010-2014, with the passing rates of 67.42%, 72.39%, 78.37%, 82.57% and 87.39% respectively in each year, with a total passing rate of 77.11%. Among them, the passing rate of large and medium-sized catering institutions was 77.91%, the passing rate of small catering institutions was 72.46% and the passing rate of school canteens was 75.22%. The highest passing rate of different types of tableware was bowl, while the lowest ones were other types. Winter tableware pass rate higher than the passing rate of summer and autumn. Conclusion 2010-2014 Nantong City, a district catering institutions and school canteens pass detection rate increased year by year, but still lower than the provincial average. In the future, we should step up law enforcement efforts on health supervision to comprehensively improve the hygiene standards of catering establishments and school canteens in the area and ensure people’s diet safety.
