以南极磷虾为研究对象,分析了南极磷虾在4℃和20℃条件下自溶过程中非蛋白氮(NPN)、TCA可溶性蛋白、氨基酸态氮、总挥发性盐基氮(TVB-N)等蛋白质组分的变化情况。结果表明,南极磷虾NPN含量随着时间的延长而增加,8 h后4℃和20℃试验组NPN含量分别为8.40和12.67 mg/g,分别占到总氮的33.12%和49.96%;TCA可溶性蛋白的变化规律与NPN基本一致,而氨基酸态氮含量显著偏低;TVB-N值同样随着时间延长而增加,8 h后4℃和20℃试验组TVB-N含量分别为0.16和0.21 mg/g。在实际生产中,南极磷虾原料应尽量避免高温条件下长时间贮存。
