时下,一些过去被认为是粗贱的粗粮食品,突然大受人们的青睬,这一饮食潮流使我想起了当年插队川东綦江县南部时的一款乡间美食——麦粑。 那是知识青年上山下乡的年代,我刚初中毕业就随这大潮插队到川东綦江南部,那里毗邻贵州和四川江津的一个乡村。这个山村在大山里,这里的油桐树颇多,每年的五、六月份,油桐叶色绿茂盛的时候,也是青黄不接缺粮的季节,刚收获的小麦便成了村民们的主粮了。主要吃法就是这里要说的蒸麦粑。
