一、工作原理与种类蒸汽杀菌锅是外界对其直接或间接加热,利用锅内水蒸气的高温杀菌消毒的一种装置。蒸汽压力高于大气压,相应的蒸汽温度高于100℃,一般称高压(有压)杀菌锅;蒸汽压力等于大气压,蒸汽温度约100℃,一般称常压(无压)灭菌灶。根据加热方式不同有对杀菌锅(灶)直接火焰加热产生蒸汽和外界通入蒸汽间接加热的区别,前者一般容量较小,后者容量较大。根据杀菌锅结构不同,可分为立式和卧式两种形式。现就直接火焰加热的有压式杀菌锅作一介绍,其典型锅有福建古田产的WSG1.5型系列杀菌锅和上海市嘉定马陆产的食用菌消毒锅。
