以成熟的‘河套’蜜瓜果实为试材,在自然贮藏条件下,观测果实采后外部形态、营养品质及与果实成熟衰老相关指标变化。结果表明:贮藏2d时,‘河套’蜜瓜果实特有的颜色、风味、质地逐渐形成,并持续至贮藏第6天;之后,随着贮藏时间的延长,果实外观品质显著下降,表现为果面粗糙,香气变淡,质地变软,同时伴有病斑出现,直至贮藏第12天时果肉溃败腐烂。贮藏期间,可溶性固形物、可溶性蛋白质、有机酸含量均呈现先升高后降低的变化趋势;总糖含量较高并呈下降趋势。贮藏期间,果肉硬度呈下降趋势;相对电导率及丙二醛含量呈上升趋势;乙烯表现为单峰变化趋势,在贮藏第10天达到峰值后迅速下降。因此,进行采后生理调控对保持优良果实品质具有重要意义。
The mature ’Hetao’ honey melon fruits were used as materials to observe the changes of postharvest external appearance, nutritional quality and the indexes related to fruit ripening and aging under natural storage conditions. The results showed that the peculiar color, flavor and texture of ’Hetao’ honeydew fruits gradually formed during the storage for 2 days, and continued until the 6th day after storage. Afterwards, the appearance quality of fruits decreased markedly as the storage time extended Rough surface, aroma fades, the texture becomes soft, accompanied by lesions appear until the 12th day when the fruit crust rot. During storage, the content of soluble solids, soluble protein and organic acid showed the trend of first increasing and then decreasing; the total sugar content was higher and declining. During storage, the firmness of flesh decreased, the relative conductivity and the content of malondialdehyde increased, while that of ethylene showed a monomodal trend, dropping rapidly at the 10th day after storage. Therefore, the post-harvest physiological regulation is of great significance to maintaining good fruit quality.
