主要对牡丹籽甾醇的提取及其抗氧化活性进行了研究。通过响应面分析法确定牡丹籽甾醇提取的最佳工艺条件,即微波功率为359 W,提取时间为70 s,乙醇质量分数为90.2%,液料比值为31(m L/g),此条件下牡丹籽甾醇的提取率达到3.19 mg/g。牡丹籽甾醇具有较强清除OH·和O_2~-·的能力。随着牡丹籽甾醇浓度增加,其清除能力逐渐增强。当牡丹籽甾醇质量浓度大于0.9 mg/m L时,其对OH·的清除率大于柠檬酸和VC。当牡丹籽甾醇质量浓度达到1.8 mg/m L左右时,其对O_2~-·的清除率大于VC,且在较大程度上大于柠檬酸。因此,牡丹籽甾醇有较好的抗氧化活性。
