多酚对疾病预防的研究依赖于多酚代谢物的分析,但多酚在人体内代谢过程复杂,代谢物多。近年来,多酚代谢物的检测方法主要有高效液相色谱法(HPLC)、反相高效液相色谱法(RP-HPLC)和液相-质谱联用法(LC-MS/MS),本文主要针对茶多酚、白藜芦醇、花色苷和大豆异黄酮代谢物检测的生物样本收集、样本处理及检测方法进行综述,为多酚类植物化学物与人体健康关系的研究提供参考。
