河鲈(Perca fluvitatilis Linnaeus)属鲈科鱼类,原产于欧洲及亚洲北部冷温带,在我国仅产于新疆额尔齐斯河流域。河鲈生长适温范围0～30℃,水温在18～24℃之间生长最快。头部、体侧、背鳍、胸鳍呈淡黄色,腹部白色,臀鳍、腹鳍及尾鳍桔黄色,体侧有7～9条黑色条斑,因此地方名也称五道黑、五彩斑鱼。河鲈肉质细嫩,爽滑少刺,营养丰富,富含人体必需的氨基酸,是一种名贵的冷温带淡水鱼类,在市场上非常走俏,尤其在国外市场被看好,丹麦已将其定为传统养殖鱼场的首选品种。该鱼为肉食性鱼类,自然生活中以水生昆虫、小鱼为主食,经驯化后可完全摄食人工配合颗粒饲料。
