采用食物频数法来评估广东的潮州、梅州、新会三个地区人群的饮食习惯。以随机抽样方法抽取年龄25岁以上男女共927人。由本人回答调查表中各项膳食摄取的量和频率.分析结果显示人群平均每人每天摄入的总热量中:碳水化合物占61~64%;蛋白质占17~19%;脂肪占16~21%。经年龄性别调整后,三个地区平均每人每天摄入膳食胆固醇330~408mg、纤维素14~24g、钠(食盐除外)1449~2334mg、钾2627~3548mg、镁467~518mg、钙621~984mg。三个地区膳食胆固醇摄入量均高,而多不饱和脂肪酸摄入比例均偏低,膳食钙的摄入量梅州、新会偏低,钠摄入量最高的地区为梅州。本文显示,广东的新会、潮州、梅州都存在摄入营养素的不合理现象,均需要进一步的饮食指导。
Food frequency method was used to assess the eating habits of the three regions of Guangdong including Chaozhou, Meizhou and Xinhui. A total of 927 men and women aged 25 and over were randomly sampled. The answer to this questionnaire was based on the amount and frequency of various dietary ingestions.The analysis showed that among the total calories per day, carbohydrates accounted for 61-64%, protein 17-19%, and fat 16-21 %. After adjusting for age and sex, the average daily intake of dietary cholesterol in each of the three regions was 330 to 408 mg, 14 to 24 g of cellulose, 1449 to 2334 mg of sodium (excluding salt), 2627 to 3548 mg of potassium, 467 to 518 mg of magnesium, 621 to 984 mg of calcium . Dietary cholesterol intake was high in all three regions, but the proportion of polyunsaturated fatty acids was low. The intake of dietary calcium was lower in Meizhou and Xinhui and the area with the highest sodium intake was Meizhou. This article shows that Guangdong Xinhui, Chaozhou, Meizhou there are irrational intake of nutrients, require further dietary guidance.
