目的了解北京市昌平区主要消费食品中食源性致病菌的污染状况,寻找引起食源性疾病的重点食品,对可能发生的食源性疾病进行预测和预报。方法 2011—2012年采集昌平区市售14类共275件食品样品进行10种食源性致病菌的分离与鉴定。结果 275件样品中共检出致病菌17株,总检出率为6.18%。生肉类和鲜冻水产品污染最为严重(20.00%),其次是生食动物性水产品(11.76%)。金黄色葡萄球菌的检出率为6.93%,副溶血性弧菌检出率为1.85%,其他致病菌未检出。结论生肉类、鲜冻水产品和生食动物性水产品是北京市昌平区市售食品的主要污染品种,金黄色葡萄球菌、副溶血性弧菌是污染食品的主要致病菌。
Objective To understand the status of food-borne pathogens in Changping District, Beijing, and to find the key foods that cause food-borne diseases and to predict and predict possible food-borne diseases. Methods A total of 275 food samples from 14 commercial sources in Changping District were collected during 2011-2012 for the isolation and identification of 10 foodborne pathogens. Results A total of 17 pathogens were detected in 275 samples, with a total detection rate of 6.18%. Raw meat and fresh-frozen aquatic products have the most serious pollution (20.00%), followed by raw animal-derived aquatic products (11.76%). Staphylococcus aureus detection rate of 6.93%, Vibrio parahaemolyticus detection rate of 1.85%, other pathogens were not detected. Conclusions Raw meat, fresh-frozen aquatic products and raw-food animal aquatic products are the main pollutants of commercial foods in Changping District of Beijing. Staphylococcus aureus and Vibrio parahaemolyticus are the main pathogens of contaminated food.
