葡萄废渣中活性物质提取工艺研究

目的:以酿酒工业废弃物葡萄废渣为材料,采用不同提取方法优化白藜芦醇、儿茶素提取工艺。方法:分别采用乙醇回流法、超声波法和闪式提取法对酿酒葡萄皮渣中的白藜芦醇、儿茶素进行提取,通过正交试验优化提取工艺。结果:超声波法提取率高于乙醇回流法和闪式提取法。超声波法提取葡萄废渣中白藜芦醇、儿茶素的最优工艺条件为乙醇浓度80%,料液比1∶10,提取时间30min。在此条件下白藜芦醇、儿茶素的提取总得率可达2.16%。结论:超声提取法适合于葡萄废渣中有效成分的提取,可在工业生产中推广使用。 OBJECTIVE: To optimize the extraction process of resveratrol and catechin with different extraction methods based on grape waste from brewery industrial waste. Methods: Resveratrol and catechin were extracted by ethanol reflux method, ultrasonic method and flash extraction method, respectively, and the extraction process was optimized by orthogonal test. Results: The ultrasonic extraction rate was higher than ethanol reflux and flash extraction. The optimum extraction conditions for resveratrol and catechin in grape waste by ultrasonic method were ethanol concentration 80%, solid-liquid ratio 1:10 and extraction time 30 min. Under these conditions, the total yield of resveratrol and catechin can reach 2.16%. Conclusion: The ultrasonic extraction method is suitable for the extraction of active ingredients in grape waste, which can be widely used in industrial production.
