用 Ca Cl2 溶液对香菇采后子实体进行真空浸渗处理的结果表明 ,10 .0 0 5mol· L-1、0 .0 1mol· L-1、 0 .0 3mol· L-1、 0 .0 6 mol· L-1、 0 .0 9mol· L-1的 Ca Cl2 处理能显著抑制香菇采后呼吸、乙烯释放 ,显著减少香菇采后可溶性固形物、蛋白质、还原糖、淀粉、有机酸、维生素 C、粗纤维等含量的损耗 ,显著抑制香菇采后细胞膜透性的增加 ,提高香菇采后贮存品质。其中尤以 0 .0 1mol·L-1、 0 .0 3mol· L-1、 0 .0 6 mol· L-1的 Ca Cl2 处理效果最好 ;2 0 .12 mol· L-1、 0 .15mol· L-1的 Ca Cl2 处理对香菇采后生理生化变化的影响与对照差异不显著 ;30 .0 0 5mol· L-1的钙抑制剂 EGTA处理能显著刺激香菇采后生理生化变化的进程
The results of vacuum infiltration treatment of mushroom fruiting body with Ca Cl2 solution showed that 10 .0 0 5mol · L-1, 0. 1mol · L-1, 0. 3mol · L-1, Ca Cl2 treatment with 6 mol · L-1 and 0. 9 mol · L-1 significantly inhibited postharvest respiration and ethylene release of shiitake mushrooms and significantly reduced postharvest soluble solids, protein, reducing sugar, starch, organic acids and vitamins C, crude fiber and other content of the loss, significantly inhibit the post-harvest mushroom cell membrane permeability increased, improve post-harvest storage quality of mushrooms. Among them, the treatment with CaCl 2 at 0 0 1 mol·L -1, 0 0 3 mol·L -1, 0 0 6 mol·L -1 was the best, and the best effect was at 20 12 mol·L -1. The effect of 15 mol · L-1 CaCl 2 on the postharvest physiological and biochemical changes of shiitake mushrooms was not significantly different from that of the control.
