试验研究了不同温度对黄瓜细胞膜渗透率的影响以及黄瓜、菜豆、甜椒、蒜苔在不同温度下贮藏后呼吸强度的变化规律,探求以蔬菜生理变化为依据测定贮藏中冷害的方法。试验结果证明:黄瓜在发生冷害的温度(0~11℃)下贮藏,随着贮藏温度的降低和时间的延长,细胞膜渗透率明显增加,黄瓜、菜豆、甜椒在发生冷害的温度下贮藏后,升温至20℃,呼吸强度表现异常的升高。而且升温后的呼吸强度与开始贮藏时呼吸强度的比值大于1。细胞膜渗透率及升温后呼吸强度的异常变化与冷害症状表现是一致的,但出现时间早。因而测定细胞膜渗透率和升温后呼吸强度的变化有可能成为预测蔬菜贮藏中冷害的方法。
The effects of different temperature on the permeability of cucumber cell membrane and the change of respiration intensity of cucumber, kidney bean, sweet pepper and garlic after storage at different temperatures were studied. The method of determining the cold damage in storage was studied based on the physiological changes of vegetables. The results showed that the cucumber was stored at the chilling injury temperature (0-11 ℃), the permeability of the cell membrane increased obviously with the decrease of storage temperature and the prolongation of time. Cucumber, kidney bean and bell pepper were stored at the chilling injury temperature , Warmed to 20 ℃, respiratory rate showed abnormal increase. And the ratio of the respiration intensity after warming to the respiration intensity at the beginning of storage is greater than one. Cell membrane permeability and respiratory changes after warming abnormal changes in symptoms and cholera symptoms are consistent, but the early appearance. Therefore, measuring the permeability of the cell membrane and the change of the respiratory intensity after warming may become a method of predicting the chilling injury in vegetable storage.
