目的了解东莞市各类餐饮单位餐(饮)具消毒质量状况,为制定提高餐(饮)具消毒质量的措施提供科学依据。方法对2008年东莞市328家餐饮单位餐(饮)具消毒效果监测数据建立数据库,按餐饮单位类型、餐具类型、消毒方式等进行统计分析。结果全市共监测餐饮单位328家,餐(饮)具消毒合格率平均为79.2%,其中大型餐饮合格率为86.4%,中型合格率为77.1%,小型合格率为65.3%。监测餐(饮)具3 260份,合格2 581份,合格率为79.2%。使用洗碗机对餐具进行洗涤、消毒的合格率为92.3%,比使用化学药物消毒(79.1%)和对餐具不进行消毒(70.5%)的合格率高。结论餐饮单位规模越大,餐(饮)具卫生合格率越高。
Objective To understand the quality of food (drink) in various catering units in Dongguan City and provide a scientific basis for making measures to improve the quality of food (drink) with disinfection. Methods To establish a database of monitoring data on the disinfection effect of 328 catering units in Dongguan City in 2008 according to the type of catering units, the types of dishes and the disinfection methods. Results A total of 328 catering units were monitored in the city. The passing rate of food and drink was 79.2% on average, of which the passing rate of large-scale catering was 86.4%, the middle passing rate was 77.1% and the small passing rate was 65.3%. Monitoring meals (drinks) with 3 260, 2 581 pass, with a pass rate of 79.2%. Dishwashers were used to wash dishes. The pass rate of disinfection was 92.3%, which was higher than that of sterilizing chemicals (79.1%) and not disinfecting tableware (70.5%). Conclusion The larger the scale of catering units, the higher the pass rate of food (drink) with health.
