目的了解山东省农村食品中主要污染物及有害因素污染水平,掌握山东省农村市场食品安全状况。方法对2011年山东省农村地区生产销售的11类1 820件食品,根据国家卫生标准进行检测和分析。结果 1 820份食品样品中有1 673份符合国家标准,合格率为91.92%。不同类别食品合格率间差异有统计学意义(χ2=2.420,P<0.05),乳粉和方便面酱料的合格率最高,为100.00%,熟肉制品合格率最低,仅为64.71%;不合格样品中以超范围使用或过量添加食品添加剂所占比例(51.02%)最大;不同检测项目合格率经χ2检验,差异有统计学意义(χ2=6.331,P<0.05)。结论山东省农村食品安全状况总体较好,但也存在微生物指标过高等问题。
Objective To understand the pollution levels of major pollutants and harmful factors in rural food in Shandong Province and to grasp the food safety situation in rural areas of Shandong Province. Methods The 11 types and 1 820 foods produced and sold in rural areas of Shandong Province in 2011 were tested and analyzed according to the national health standards. Results 1 673 samples out of 1 820 food samples were in line with national standards, with a pass rate of 91.92%. The percentages of passing rate of different types of food were statistically significant (χ2 = 2.420, P <0.05). The highest passing rate of milk powder and instant noodles was 100.00%, and the passing rate of cooked meat products was the lowest, only 64.71% The proportion of food additives used in over-range or over-added samples was the highest (51.02%). The pass rate of different test items was statistically significant (χ2 = 6.331, P <0.05). Conclusion The overall situation of food safety in rural areas of Shandong Province is generally good, but there are also some problems such as excessive microbial indicators.
