目的分析、了解田东县食品安全状况,评价食品生产经营企业的污染控制水平与食品安全标准的执行效力,为食品安全风险评估、风险预警、标准制(修)订和采取有针对性的监督管理措施提供科学依据。方法根据《2013年食品污染和有害因素风险工作手册》、《2013年食源性疾病监测工作手册》、国家标准方法或推荐方法进行监测,对监测数据进行分析、比较。结果监测145份样品,合格89份,总合格率为61.4%。微生物及其致病因子监测合格率为49.5%,污染物及有害因素监测合格率为97.2%。熟肉制品合格率为13.8%,盒饭和瓶(桶)装饮用水、直饮水合格率为21.4%。结论食品安全问题令人担忧,食品中微生物污染尤为严重,是目前食品安全的隐患,相关部门应加强对农贸市场和学校食品安全的监督管理工作。
Objective To analyze and understand the food safety situation in Tiandong County, evaluate the implementation of the pollution control level and food safety standards of food production and operation enterprises, and provide targeted supervision for food safety risk assessment, risk warning and standardization (revision) Management measures to provide a scientific basis. Methods According to the 2013 Handbook on Risk of Food Contamination and Harmful Factors, the 2013 Foodborne Disease Surveillance Handbook, the national standard method or the recommended method, the monitoring data were analyzed and compared. Results 145 samples were monitored, 89 were qualified, the total pass rate was 61.4%. The qualified rate of microorganism and its causative factor monitoring was 49.5%, and the qualified rate of monitoring of pollutants and harmful factors was 97.2%. Cooked meat products pass rate of 13.8%, box lunch and bottles (barrels) installed drinking water, drinking water qualified rate of 21.4%. Conclusion The food safety problem is worrying. The microbial contamination in food is particularly serious. It is the hidden danger of food safety at present. Related departments should strengthen the supervision and management of food safety in farmer’s market and school.
