卫生部发布了《餐饮业食品卫生管理办法》,对餐饮业的卫生管理、食品的采购和储存、食品加工、餐饮具的卫生要求等作了明确规定。办法自2000年6月1日起施行。 该办法适用于一切从事餐饮业经营活动并在固定场所的单位和个人,也适用于单位和学校的集体食堂。办法要求餐饮业经营者必须建立健全卫生管理制度,配备专职或兼职的卫生管理
The Ministry of Health has issued the “Measures for the Administration of Food Hygiene in the Catering Industry”, which clearly stipulates the hygiene management of the catering industry, food procurement and storage, food processing, and hygiene requirements for food and beverages. The measures will come into effect on June 1, 2000. This method is applicable to all units and individuals engaged in the business activities of the catering industry and in fixed places, as well as to the collective canteens in units and schools. Measures require catering operators to establish a sound health management system with full-time or part-time health management
