蔬菜是人们日常必需的食物之一,正常情况下食用适量的蔬菜对人体健康是有益的,也是非常安全的。但由于食用蔬菜不当而引起的急性中毒也屡有发生。从引起中毒的蔬菜化学分析结果来看,均含有大量亚硝酸盐,正是这一化合物导致了急性肠原性青紫症。另一方面亚硝酸盐可以在人体内与一些有机氨作用,形成强致癌因素亚硝胺类化合物,长此会对人体健康造成潜在的危险。
