对从黑米、黑豆、海藻 (铜藻 )提取的色素 ,进行清除活性氧和抑制脂质过氧化的实验研究 ,结果发现三种色素对O2 和·OH均有良好的清除作用 ,也能明显地抑制卵黄脂蛋白PUFA的过氧化。同时对三种色素的理化性质作了一些定性分析。
The experimental study on removing reactive oxygen species and inhibiting lipid peroxidation of pigments extracted from black rice, black beans and seaweed (copper algae) showed that the three pigments had good scavenging effects on both O2 and · OH and also obvious To inhibit the lipid peroxidation of yolk lipoprotein PUFA.
