目的了解天津市河西区餐饮业餐饮具卫生状况,为食品卫生监督部门制定相关措施提供依据。方法收集河西区2011-2013年餐饮单位餐饮具消毒监测数据进行统计学分析。结果餐饮单位总体合格率为61.4%,相比2011年,2012和2013年合格率显著提高;集体食堂、学校食堂和大型餐饮店合格率相对较高,中小型餐饮店合格率相对较低;餐饮具样品监测情况:3年共检测样品42 974件,合格率为80.8%,合格率有逐年上升趋势;大型餐饮店合格率最高,其次是集体食堂和学校食堂,最低为中小型餐饮店;一、四季度合格率明显高于二、三季度。结论河西区餐饮业卫生状况逐年改善,应进一步加强餐饮单位尤其是中小型餐饮单位的卫生监督和监测力度,以预防食源性疾病的发生。
Objective To understand the health condition of catering tableware in Hexi District of Tianjin and provide the basis for the relevant measures to be formulated by the food hygiene supervision department. Methods The data of disinfection monitoring of catering tableware in Hexi District from 2011 to 2013 were collected for statistical analysis. Results The overall pass rate of catering units was 61.4%, which was significantly higher than that of 2011, 2012 and 2013. The pass rates of collective canteens, school canteens and large restaurants were relatively high, and the pass rates of small and medium-sized restaurants were relatively low. With sample monitoring: a total of 42 974 samples were tested in 3 years, with a pass rate of 80.8% and a passing rate of approaching year-by-year. Large-scale catering shops had the highest pass rates, followed by collective canteens and school canteens, with the lowest number being small and medium- , The fourth quarter pass rate was significantly higher than the second and third quarters. Conclusion The health status of catering industry in Hexi District has been improved year by year. Health supervision and monitoring of catering units, especially small and medium-sized catering units, should be further strengthened to prevent foodborne diseases.
