苋菜(Amaranthus spp.)在外观上的特点是叶色多样性。人们常以其叶色的不同而分为青叶苋、红叶苋、紫叶苋、花叶苋等。一般认为叶色的表现,主要由于叶组织中叶绿素及花青素含量的多寡及其相互比例的大小造成。在蔬菜作物叶绿素与花青素、胡萝卜素、茄红素等含量的分析中以菠菜、黄瓜、蕃茄等较多,而对苋菜叶色分析的报道则很少。为此,本文作了如下的分析。
Amaranthus (Amaranthus spp.) In appearance is characterized by leaf color diversity. People are often divided into leaves of different colors of green leaf amaranth, red leaf amaranth, purple amaranth, amaranth and so on. Generally considered the performance of leaf color, mainly due to the amount of chlorophyll and anthocyanin content in leaf tissue and the size of their mutual ratio caused. In the analysis of content of chlorophyll, anthocyanin, carotene and lycopene in vegetable crops, there are more spinach, cucumber and tomato, while there are few reports on leaf color of amaranth. To this end, this article made the following analysis.
