目的了解餐馆食用油和餐厨废弃物管理现况,寻找监管薄弱环节,提出合理化解决方案,探索长效管理措施。方法对江都区所有餐馆进行食用油采购索证索票及餐厨废弃物处置情况检查,同时采集食用油样品,检测酸价、过氧化值。结果全区共检查餐馆626家,餐馆索验食用油供货方资质证明材料、票据及台账记录的规范率分别为73.88%、66.16%和66.10%;餐厨废弃物收集容器、索验废弃物收运方资质证明材料和台账记录的规范率分别为71.13%、68.91%和66.29%。检测食用油样品626份,合格率94.4%。在食用油、餐厨废弃物管理方面,城区餐馆好于乡镇,大中型餐馆好于中小型。结论监管部门要加强对乡镇和中小型餐馆的监督指导。
Objective To understand the status quo of edible oil and food waste management in restaurants, find out the weak points in supervision, put forward rational solutions and explore long-term management measures. Methods All restaurants in Jiangdu area were inspected for purchase of oil purchase certificate and food waste disposal, and samples of edible oil were also collected to detect acid value and peroxide value. Results A total of 626 restaurants were inspected in the whole district, and the normative rates of qualification certificates, bills and accounting records of edible oil suppliers in restaurants were 73.88%, 66.16% and 66.10%, respectively; meal container waste collection containers, The standard rates of material receipt documents and accounting records of shipping receipt parties were 71.13%, 68.91% and 66.29% respectively. 626 cooking oil samples were tested with a pass rate of 94.4%. In cooking oil, food waste management, urban restaurants better than townships, large and medium-sized restaurants better than small and medium-sized. Conclusion Regulatory authorities should strengthen the supervision and guidance of townships and small and medium-sized restaurants.
