饮食和文化是不同地域间交流的结果,同时经过不同的历史年代,不断碰撞取舍选择,实现了各自的发展。日本从弥生时代以后,以律令制国家时期形成的稻米文化为基础,对肉食的排斥、以及鱼和稻米组合,形成了日本独特的传统餐饮模式。日本历史上的肉食禁忌夹杂着宗教意识,在漫长历史过程中被选择被创造,是日本文化的结晶。
