在文人看来,“牛嚼牡丹”总是件有碍风雅的事情。不过,近年来越来越多的研究表明,牡丹花瓣、花粉、种籽等均含有大量有益于人体健康的营养成分,大嚼牡丹还真是件好事。最近,牡丹和芍药已经被列为芳香植物,据记载,牡丹根皮含精油0.15%~0.4%;牡丹鲜花中鉴定出49种化合物,含丰富的天然香料物质,如香茅醇、香叶醇、芳樟醇等,萜烯及烃类化合物,可用作化妆品主要成分或用作食品、饮料及日用化工产品的天然添加剂。
