目的:以龙井茶、苹果皮、葡萄皮籽、柿子叶、山楂和柿子皮6种较高多酚含量的植物为原料,提取其有效成分,测定其多酚含量,分析各提取物对4种臭味化合物——异戊酸、三甲胺、氨气和吲哚的除臭效果,多酚物质含量与除臭效果的相关性。方法:样品经干燥、粉碎后的水提物,以福林酚法检测总酚含量;将各提取物与臭味化合物置于除臭瓶中,采用GC-MS及感官评定法分析除臭效果。结果:龙井茶提取液的总酚含量最高(124.28 mg/g),柿子皮的最低(0.24 mg/g)。各提取液对上述4种臭味化合物均有不同程度的吸附效果,尤其对三甲胺和吲哚的消除能力显著,其中山楂和龙井茶提取物对三甲胺的除臭率分别为100%和65.4%,龙井茶提取物对吲哚除臭率为68.2%;各提取物对氨气的除臭效果较低,最高的龙井茶提取物仅为19.8%;不同含量柿子叶提取物总酚含量与异戊酸、三甲胺和吲哚的脱臭效果相关性分析发现,两者有一定相关性,相关系数为0.93。
OBJECTIVE: To extract the effective components of six high polyphenols from Longjing tea, apple peel, grape seed, persimmon leaf, hawthorn and persimmon peel, and determine their polyphenol content. The effects of each extract on four kinds of polyphenols Odor compounds - isovaleric acid, trimethylamine, ammonia and indole deodorant effect, polyphenol content and deodorant effect. Methods: The dried and ground water samples were collected and the content of total phenols was determined by Folin phenol method. The extracts and odor compounds were placed in deodorant bottles. The deodorizing effect was analyzed by GC-MS and sensory evaluation . Results: Longjing tea extract had the highest total phenolic content (124.28 mg / g) and the lowest persimmon husk (0.24 mg / g). The extract of the four kinds of odor compounds have different degrees of adsorption effect, in particular, trimethylamine and indole elimination ability was significant, which hawthorn and Longjing tea extract trimethylamine deodorant rates were 100% and 65.4 %. The deodorization rate of Longjing tea extract to indole was 68.2%. The deodorant effect of each extract on ammonia was low, and the highest Longjing tea extract was only 19.8%. The content of total phenolics and Isolation of isovaleric acid, trimethylamine and indole deodorization correlation analysis found that there is a certain correlation between the two, the correlation coefficient of 0.93.
