在pH=10.80及不同温度下,利用常规荧光法、同步荧光法、共振光散射和紫外-可见光谱研究了氢化松香酸钠(HSR)与明胶的相互作用.结果表明HSR与明胶有一个结合位点,聚集体的形成引起明胶内源荧光增强.据此建立了体系荧光增强与HSR浓度的线性关系式,计算了不同温度下反应的结合常数及对应温度下结合反应的热力学参数.二者之间主要靠疏水作用力结合。
The interaction between hydrogenated sodium rosinate (HSR) and gelatin was investigated by conventional fluorescence, synchronous fluorescence, resonance light scattering and UV-Vis spectra at pH = 10.80 and different temperature.The results showed that HSR has a binding site with gelatin The formation of aggregates led to the increase of endogenous fluorescence of gelatin, and the linear relationship between fluorescence enhancement and HSR concentration was established.
