研究了澳洲宝石斑的营养成分并对其进行评价。采用氨基酸自动分析仪、气质联用系统、原子吸收分光光度计、高效液相色谱仪等对鱼肉的蛋白质、氨基酸、脂肪、脂肪酸、矿物质及维生素的含量进行了分析。分析结果表明,宝石斑肌肉的蛋白质含量为18.0%,含有18种氨基酸,限制性氨基酸为色氨酸;脂肪含量为16.1%,不饱和脂肪酸含量较高;矿物质含量丰富,尤其是钙、磷、钾和硒;维生素含量也较高,因此认为宝石斑是生产保健食品的良好天然资源,具有较高的利用价值。
The nutritional content of Australian gemstones was studied and evaluated. The contents of protein, amino acid, fat, fatty acid, minerals and vitamins in fish meat were analyzed by automatic amino acid analyzer, GC / MS, atomic absorption spectrophotometer and high performance liquid chromatography. The results show that the protein content of gem spot muscle is 18.0%, contains 18 kinds of amino acids, the limiting amino acid is tryptophan, the fat content is 16.1%, the content of unsaturated fatty acid is high, and the mineral content is rich, especially calcium and phosphorus , Potassium and selenium; vitamin content is also higher, so that gem spot is a good natural resource for the production of health food products, with high value.
