食用菌干燥在我国正处于大力发展和进一步提高技术水平阶段。本文从食用菌干燥基本理论(质热基本参数、干燥特性和数学模型)、较优工艺及参数(单一工艺、复杂工艺)、干燥机典型结构类型(强制循环式、垂直通风式、挨向通风式、并流式、隧道式及电子监控应用)等几个方面介绍了当前我国食用菌干燥技术的研究和应用现状,并才今后发展方向提出建议。
Dry edible fungus in our country is in the process of vigorous development and further improve the technical level. In this paper, the basic theory of edible fungi drying (basic parameters of heat and mass, drying characteristics and mathematical model), the superior technology and parameters (single process, complex process), dryer typical structure type (forced circulation, vertical ventilation, Current, tunneling and electronic monitoring applications) and several other aspects introduced the current status of research and application of edible fungus drying technology in China, and only make recommendations for the future direction of development.
