为了明确重金属所致的环境污染及其在营养学上的重要性,作者测定了日本山阴地方的食品和医院的饮食,以及大白鼠和人体肌肉内重金属的含量,特别是Fe、Cu、Zn、Cd、Mn的含量,而且指出随着食品中Zn/Cu比值的增高,可能成为心脏疾患的病因,并认为肉类Zn/Cu的比值高(10—60),而蔬菜类的比值较低(10以下)。
In order to clarify the environmental pollution caused by heavy metals and its nutritional importance, the authors measured the food and hospital diet and the contents of heavy metals in the muscles of rats and humans in the shanyin area of Japan, in particular Fe, Cu, Zn , Cd and Mn, and pointed out that with the increase of Zn / Cu ratio in food, it may be the cause of heart disease and the ratio of meat Zn / Cu is high (10-60), and the ratio of vegetables is lower (Below 10).
