普通念珠藻(Nnstoc commune,俗称地耳葛仙米)及发状念珠藻(Nostoe flagehiforme,俗称发菜)的粗蛋白、氨基酸、灰分及9种无机盐的测定结果。研究表明,地耳和发菜的粗蛋白含量分别为20.80g/100g和20.14g/100g,含有包括8种必需氨基酸在内的18种氨基酸,第一限制氨基酸均为蛋氨酸。二者钙含量分别为2175和1717mg/100g;地耳镁含量为1067.4mg/100mg、铁含量为668.9mg/100g而居各种食物含量之首。由于地耳生长适应性强、耐干旱和盐碱,在缺粮严重的沙漠地区是值得开发利用的食物资源。
Nnstoc commune (commonly known as Auricularia axillaris) and Nostoe flagehiforme (commonly known as Nostoc) are the crude protein, amino acid, ash, and nine inorganic salts. Studies have shown that the crude protein content of the ear and seaweed is 20.80g/100g and 20.14g/100g respectively, contains 18 kinds of amino acids including 8 kinds of essential amino acids, and the first limiting amino acid is methionine. Their calcium content was 2175 and 1717mg/100g respectively; their magnesium content was 1067.4mg/100mg and their iron content was 668.9mg/100g, ranking first among all food contents. Because of the strong adaptability of the ear, drought resistance and salinity, it is a food resource that is worth exploiting and exploiting in the desert-deficient areas.
