目的了解保定市城乡结合部幼儿园儿童食谱现状并进行营养质量评价,为制定符合幼儿园儿童生理需求特点的营养食谱提供科学依据。方法选取保定市城乡结合部花园里幼儿园,对该园的儿童食谱,收集1次/周,连续收集8周,分析其早、中、晚餐及加餐的膳食结构。并根据《中国儿童少年营养与健康报告2011——培养健康饮食行为促进儿童健康成长》和《中国居民膳食指南》,评价其食谱营养质量。结果幼儿园采用三餐两点制;早餐常吃2~3种食物:主食和汤类,但牛奶及其制品的食用频率为1次/周;午餐由主食、炒菜和汤类食物组成,而动物内脏、海产品及深色蔬菜等食用频率较低;晚餐的种类基本同午餐,但粗粮摄入少;加餐多以膨化食品和水果为主。结论该幼儿园膳食制度较合理。早餐营养质量较好,但缺乏奶及其制品;午餐和晚餐虽食物品种多,但含铁、钙和维生素B1、B2及C丰富的食物及粗粮较少。建议幼儿园制定营养早餐、丰富午餐、合理晚餐和科学加餐的营养食谱。
Objective To understand the status quo of children’s recipes in kindergartens at the urban-rural boundary in Baoding city and to evaluate their nutritional quality, and to provide a scientific basis for formulating nutritional recipes that meet the physiological needs of children in kindergartens. Methods The garden kindergarten in the urban-rural area of Baoding was selected. The recipes of children in the garden were collected once a week for 8 weeks. The diet of early, middle, evening and meal was analyzed. According to “China Children and Adolescents Nutrition and Health Report 2011 - to develop healthy eating behavior to promote healthy growth of children” and “dietary guidelines for Chinese residents” to assess the nutritional quality of their recipes. Results Kindergarten three meals two-point system; breakfast eat 2-3 kinds of food: staple foods and soups, but milk and its products consumption frequency of 1 / week; lunch consists of staple food, cooking and soup food composition, and animal Offal, seafood and dark vegetables, such as lower frequency of eating; dinner with the basic types of lunch, but less coarse grains intake; snacks and more to puffed food and fruit-based. Conclusion The kindergarten diet is more reasonable. Breakfast nutrition better quality, but the lack of milk and its products; lunch and dinner, although the variety of food, but less iron, calcium and vitamin B1, B2 and C less food and coarse grains. Suggest kindergarten to develop nutritious breakfast, rich lunch, reasonable dinner and scientific diet nutrition recipes.
