目的了解漯河市肉类食品中沙门菌的污染状况,为预防食源性疾病提供依据。方法按照国家食品安全风险监测工作手册的方法连续五年进行肉类样品采集和卫生检验。结果 2011-2015年共采集314份肉类食品,沙门菌的检出率为1.9%。不同采样年份、不同产品类型和不同采样环节沙门菌的检出率不具有统计学意义(P>0.05)。结论漯河市的肉类食品总体是好的,但存在一定的沙门菌污染风险,提示监管部门强化监管和合理烹饪,预防食源性疾病的发生。
Objective To understand the contamination status of Salmonella in meat products in Luohe City and provide basis for prevention of foodborne diseases. Methods According to the national food safety risk monitoring manual method for five consecutive years of meat samples collected and health inspection. Results A total of 314 meat products were collected during 2011-2015. The detection rate of Salmonella was 1.9%. The detection rate of Salmonella in different sampling years, different product types and different sampling stages did not have statistical significance (P> 0.05). Conclusion Luohe City, the overall meat is good, but there is a certain risk of Salmonella contamination, suggesting that regulatory authorities to strengthen supervision and rational cooking to prevent foodborne diseases.
